Ketogenic Casserole Spinach

Spinach and chard are the vegetables that I like the most. Ways to prepare them there are many, but there is always a recipe that you have more love. It’s the one I bring today, the favorite at home. My children and my husband loves it. My youngest daughter doesn’t like to eat vegetables, but for this dish, she will eat it without complaining. I give her one portion, and she can finish it. If we have visited, I often serve it, since it is a super easy low-carb side dish that is a perfect accompaniment to any main course entrée. Even if the guest is a vegetarian, they can eat it as the main course. They always ask for extra ration.

– 600 g of spinach

– ½ cup heavy cream

– 3 eggs

– 1 small onion, chopped

– 50 g of butter (or oil)

– ½ cup mozzarella cheese

– 1/2 cup parmesan cheese

– garlic powder

– Nutmeg

– salt and pepper

We wash the spinach, boil it in boiling water, drain it well and reserve it. It is important that they are well drained. You can use frozen spinach.

In a bowl, mixed cream, eggs, parmesan cheese, garlic powder, nutmeg, salt and pepper

To prepare the sauce: heat the butter over low heat and add the chopped onion. Wait until transparent. Turn the heat off, and add the spinach, then the liquid mixture. Put in the oven for 30 minutes, then take it out. Spread grated mozzarella and some grated parmesan. Bring it back to the oven for gratin for 5minutes. When this gratin to our liking we remove the tray from the oven and serve immediately.
